Keto Chicken Salad With Thai Peanut Dressing
INGREDIENTS
For the Dressing
- 1/4 cup olive oil
- 1/4 cup rice vinegar, unseasoned
- 1 tablespoon soy sauce, I use gluten-free tamari
- 1 teaspoon sesame oil
- 1 tablespoon peanut butter
- 1/2 teaspoon salt
- 1/2 teaspoon Sriracha sauce
- 1 tablespoon minced fresh ginger
- 1/2 tablespoon garlic powder
For the Slaw
- 12 oz bag of prepared slaw mix
- 1/2 cup chopped green onion
- 1/2 cup chopped cilantro
- 1 1/2 cup cooked chicken
INSTRUCTIONS
- Whisk all dressing ingredients together.
- Add vegetables and chicken, and toss to combine.
- Chill and serve.
